Fill caps with mushroom and onion mixture. Wipe mushrooms with a clean cloth and remove stem from center. Place on a sheet pan and drizzle with olive oil. Add mushroom caps and toss to coat in butter. Remove from heat; transfer to a bowl and refrigerate until cooled.
