In a large, heavy pot over medium heat, heat butter. Season with salt, pepper, and Old Bay, then stir in garlic and tomato paste. Add the salt, pepper, and curry powder to taste and the crabmeat.

The ingredients needed to make Crab Bisque:
  1. Take 1 no Crab shells & legs
  2. Prepare 30 grams Onion roughly chopped
  3. Make ready 30 grams Celery roughly chopped

  5. Get 2 tsp Tomato puree
  6. Get 1 pinch Thyme
  7. Prepare 1 sprig Parsley stems

  10. Get 50 grams Crab meat (removed from claws)
  11. Take 1 tsp Refined oil
  12. Take 1 no Onion, sliced
  13. Get 30 mls Brandy
  14. Take 2 cups Shell fish stock / plain water
  15. Make ready 1 tsp Raw rice
  16. Prepare 1 tsp Tomato puree
  17. Make ready 20 mls Cooking cream
  18. Prepare to taste Seasonings
  19. Get to taste Cayenne pepper / Chilli powder

Stir in garlic, bay leaves, cayenne pepper, Cajun seasoning, salt, and pepper. In a large soup pot, melt the butter. The best-tasting crabmeat comes from crabs you cook yourself. If you have access to live crabs, use them to make this bisque.

Instructions to make Crab Bisque:
  1. Break the claws & legs from a whole crab & reserve them for cooking & garnish as well.
  2. Separate the meat from the body & claws, wash the body & keep aside
  3. Cover the reserved legs & claws in a stock pot with & let it simmer
  4. Remove the froth, reduce the heat, add rest of the ingredients & simmer for 30 minutes
  5. In a saucepan, heat oil, cook sliced onion till transparennt for 5 minutes
  6. Remove from heat, let it cool, once the liquid is cool enough, blend it to a smooth paste
  7. Now simmer the soup, add chilli powder, seasonings & cream.
  8. Do not let the soup boil, just simmer till it is ready for serving.
  9. Decorate the soup with cooked claw, crab meat & finely chopped parsley.

Melt the butter over medium heat in a large pot. Thin slightly with water if necessary.
