Steps to make Spring Rolls:

  2. Heat the oil in a wok or pan. Stir fry the courgette, onions, carrot, pepper, spring onions, garlic, ginger, and chilli for 5-6 mins.
  3. Set aside and add the Chinese lettuce.
  4. Spoon the mixture (about 2 tablespoons) into the corner of a pastry sheet. Roll and tuck in the sides.
  5. Mix together the cornflour/arrowroot and water. Seal the roll like an envelope with this water/cornflour mixture.
  6. Fry each roll in hot oil for 3-4 mins.

Cover it with another plastic sheet and keep it in the freezer until the spring rolls are frozen. Remove the frozen spring rolls and store it in a freezer safe container. The spring roll wrappers tend to dry out with time or once chilled, so spring rolls are best assembled shortly before serving. If you'd like to keep them fresh for a couple of hours, store them under a lightly damp, lint-free tea towel at room temperature (the skin tends to harden in the refrigerator). Spring roll wrappers are sold at Asian grocery stores.
