- Wash and cut you plantain into pieces but not too tinny, add your already sliced onions, dry fish and bonga fish and allow to boil for 15minutes, add your pepper, crayfish, salt, maggi and allow to boil for 3 minutes, followed by your red oil and lastly already sliced scent leaf allow to boil for few minutes then taste for salt and your plantain pottage is ready. I've never heard of it before. If you want to enjoy plantain pottage well, cook with dry fish. Some people don't add vegetables, but I add because of nutritional value. You may also add snail to it. Add enough red palm oil to make the meal colourful.
