- Mix all the ingredients together with cold water into a smooth batter
- Heat the oil
- Once hot, add 2 teaspoons of the oil to the batter and mix in the bicarbonate of soda until a froth forms on top
- Dip each slice of potato into the batter and carefully lower into the oil turning frequently ensuring the potato cooks thoroughly on a medium heat
- Serve with a coriander dip, as per previous post. Add Greek yogurt, a little cumin powder and salt to taste and stir into a dip texture
