- In a bowl take 1 1/2 cup of water. Add citric acid and sugar. Mix well till both dissolves. Add salt and turmeric. Mix well.
- Add besan to it. Add chilli paste. Mix well. Add soda bi carbon with 1 tbsp water. Mix it nicely in one direction only.
- Grease dish nicely. Add batter to it. Steam it for 10 minutes on semi high flame and 10 minutes on medium flame.
- Let it cool nicely. Cut it into equal size square pieces.
- Take chilli, salt, turmeric, curd, sugar and schezwan chutney in a bowl. Mix it nicely.
- In a pan take oil. Add mustard seeds. Once splutters dip Khaman on all sides in marinate and roast it in Kadai. Roast on all sides.
- Tandoori schezwan Khaman is ready to serve. Enjoy with cup of tea or coffee.
