  2. Whilst the sweet potato is baking, arrange salad leaves on a serving dish. Remove stone from avocado, peel and slice or cube. Add to salad leaves with cherry tomatoes, sliced red pepper and peeled and sliced apricots.
  3. Add warm sweet potato to the top of the salad. Add a dressing to suit your own taste. Serve immediately.

If it isn't blending add more apple cider vinegar / water depending on how vinegary you like it. Mix together the cooked sweet potatoes and the mayo. Once roasted, add the sweet potatoes to the bowl with the veggies and toss everything together with the dressing. Taste the sweet potato salad and adjust seasonings as needed. You can serve this roasted sweet potato warm, or let the flavors mingle in the fridge for a few hours before serving chilled.
