Drain and transfer to a wok. Stir fry for a couple of minutes with a little bit of fragrant sesame oil and garlic to give it flavor. Plate and serve this healthy tilapia and mixed vegetable stir-fry! Heat the oil in a stir-fry pan.

Instructions to make Mixed vegetable stir-fry:
  1. Cut vegetables to pieces.
  2. Boil some water with a good pinch of salt.
  3. Blanch your vegetables, by putting the carrots in the boiling water for 30 seconds before putting in the baby corn, broccoli, and mange tout respectively. Refresh them in iced water and leave them on the side.
  4. Bruise and chop the garlic
  5. Heat the oil in a wok. Then stir fry the chopped garlic. Then add the vegetables and stir with high heat until they soften.
  6. Then add the sauces, sesame oil, sugar and water. Keep stir-frying them and ensure that all vegetables are coated in the sauce. Serve immediately.

Add the garlic and sauté over low heat for a minute or so. Add all the vegetables, and turn up the heat. For my Chinese mixed vegetable stir fry I used broccoli, carrots, mushrooms, baby sweetcorn, sugar snap peas and asparagus. I find the combination of sweet and bitter tasting vegetables ideal for a Chinese stir fry. For this particular Chinese mixed vegetable stir-fry, I decided to use onions, mushrooms, carrots, peppers, and broccoli.
