  5. Put in oven for 30 mins. Cake is done when knife comes out of it clean. If it's going too brown but not cooked through, wrap tins in aluminium foil and return to oven for 10 - 15mins more.
  6. Make the lemon Syrup by boiling lemon juice and remaining 115g of caster sugar in pot untill clear.
  7. Remove cakes and put onto cooling rack immediately
  8. Pour the lemon syrup over the cakes while they are still hot
  9. Sprinkle remaining lemon zest over the cakes and allow to completely cool.
  10. Serve
