This was a great addition to the mini-Oktoberfest we had for some neighbors - bratwurst German potato salad beer and apple strudel. In a large bowl, stir together apples, cinnamon, lemon zest, sugar, salt, and raisins. Cook and stir over medium heat until the mixture boils and thickens.

- Take 8 medium apples
- Make ready 500 g puff pastry
- Make ready 1-2 handfuls sultanas

Traditional Viennese Apple Strudel is made with strudel dough. A soft dough made with only a handful of ingredients that's hand- stretched into a paper-thin sheet the size of a tabletop. But many are afraid of making a strudel dough, so recipes these days often cheat by using sheets of purchased phyllo dough or puff pastry.
Steps to make Apple strudel:
- Peel and grate the apples
- Mix with crushed walnuts, sultanas, cinnamon, rum and sugar
- Powder a bit of plain flour on a flat surface, put the puff pastry on the top, powder it again and roll it into a size of your baking tray
- Oil the puff pastry as little as possible. This is to prevent liquid from the apples from leaking out from the loaf while baking. You can also sprinkle it with chia seeds.
- Layer half of the apple mixture on the puff pastry
- Roll as if you were rolling a maki sushi, then fold both ends facing the middle and put the loaf folds down
- Use the other half of ingredient to make another loaf
- Spread a thin layer of egg on the loafs. This will give them a nice brown colour.
- Put in the oven for 20 minutes on 180°C / 356°F
- Put egg on the loafs once again half way through the baking
- When it cools down, optionally dust with icing sugar over a fine sieve. Cut diagonally into thick slices with a bread knife and enjoy 😋
Repeat the entire procedure for the second strudel. NOTE: Frozen phyllo leaves for strudel can be found at most supermarkets in the frozen foods sections. Place pastry on a baking sheet and unfold. In a medium bowl, combine sugar and cinnamon; mix well. Line a baking tray with baking parchment.
