I'm lucky that I have red Thai chilli peppers growing in my garden, also known as Bird's Eye Chilis. These peppers are much spicier than Jalapeños, but about half the heat of Habanero Peppers. Customize your sweet chilli sauce according to your heat tolerance. Short of smearing it on my face in lieu of facial cream (but that's only because chilli sauce lacks SPF to protect you from UVA/UVB), I use this dipping sauce in, and with, everything, even things I shouldn't use it with: fresh spring rolls.

Instructions to make Sweet and chilli sauce:
  1. Boil the chilli in the 1 cup of water for 5-7mins until its done or is boiling.
  2. Let it cool and then blend it until smooth or all the chilli has disintegrated.
  3. Place the mixture back on heat and add the sugar, vinegar, garlic and salt and cook until the garlic has completely cooked.
  4. In a small bowl or cup, stir in the corn flour and water and pour the mixture into the chilli sauce. Simmer it until the sauce thickens.
  5. Remove from heat and serve it or store if you aren't using it immediately.

Sweet chili sauce is usually made with fresh red chiles, but I rarely see those at the store, so I took a short cut. I used sambal oelek, which is basically just Well guys, I'm a qualified chef and I didnt have Sambal olek so I made my own using Chilli flakes tomato paste fredhly ground ginger , lemon grass. To make the dip, mix the water and cornflour together to dilute the cornflour. This post focuses only on sweet chili sauce. Your best bet for a quick need: A hot sauce and honey mix.
