  13. Take 2 inch long Cinnamon stick
  14. Prepare 6-7 whole Black pepper corn
  15. Get 2 tablespoon Mustard oil (or any cooking oil)
  16. Make ready to taste Salt

Steps to make Mutton Paya:
  1. Take fresh good quality mutton leg small pieces.
  2. Heat 2 tbsp mustard oil or any type of cooking oil in a big pressure cooker. Add in sliced onion and cook until onion becomes light golden brown.
  3. Also add in whole garam masala like cinnamon,cardamom and black peppers.
  4. Saute for a couple of seconds and then add in ginger-garlic paste.
  5. Add in chopped tomato and saute for 2-3 minutes until tomatoes become soft.
  6. Next all the spices and salt, mix well and saute for few minutes until the mixture becomes mushy and oil starts separating from the spices.
  7. Add in mutton pieces and saute further 5-6 minutes. Sprinkle little water to avoid burning of spices.
  8. Add in sufficient hot water(approximately 2 l) to the cooker and then close the lid.
  9. Cook in high heat until 2 whisles and then reduce the heat to medium low and cook for about 2 and 1/2 hour.
  10. After 2&1/2 hours later switch off the flame. Wait to release steam in itself. Delicious and nutritious mutton paya is ready now. The gravy should be very thin in consistency.
  11. Serve hot with bread or any kind of rote, naan etc.
  12. Note: If you cook in saucepan then cook in medium low heat for 3&1/2 to 4 hours.
