Bajra is high in proteins with a good amount of amino acids. It is a good source of iron, which helps formation of hemoglobin i. Only difference I remember that the Theplas were crisp and Dhebras were soft. Is this because the cooking times and amount of cooking oil were different ?

Instructions to make Dhebras:
  1. Add all the ingredients together to form a dough and leave to ferment overnight
  2. Then in the morning knead the flour and get some cling film and put it on the work surface place a small round ball and cover with another sheet of cling film. Then using a steel small bowl shape into identical dhebras.
  3. Deep fry these on low heat abd enjoy one leads to another cant stop eating these!!!

Travel food Bajri dhebras (millet parathas) is a common snack for Gujaratis. Train, car, plane, bullock cart or ship, however one travelled, bajri dhebras were carried to have on the way. I remember my mum packing a pile of the dhebras for our train journey to Mombasa. Small dhebras was originally considered as travel food. The dhebras were made with tamarind paste and jaggery and would stay for days without getting spoilt.
