  5. Add in collard greens and salt, saute for a few minutes until wilted. turn off heat
  6. Remove polenta from heat and spread ½ tsp of goat cheese on each round. then top with collards. serve and bask in the compliments you will undoubtedly receive.

The un-fried polenta keeps well in the fridge and can be fried up for a quick meal with the greens. If you don't have fresh tomatoes use a bit of sauce. I top with fresh shredded mozzerella because I cook for a "non funky cheese eater" and goat cheese classifies as a "funky cheese" to him:-p Top with a soft-boiled egg, herb pesto, green garlic, and toasted pine nuts. Made a variation with what was on hand. Used cheddar, scallions & organic spicy salsa,in place of goat cheese, red pepper and salsa verde.
